You can see here… line a muffin cup with deli ham or turkey (you want to make sure that it’s thick deli meat– thanks for that suggestion Meaghan!!)… then pop in all your favorites… I chose chopped spinach and cheddar for this recipe and top with an egg!

These Ham Spinach Egg Cups take about 20-25 minutes to cook, depending on if you want the egg to be soft baked or more firm like I did in this recipe. Although I do love a good soft baked egg… over a thick and grainy slice of buttered toast, oh YES!

Serves: 6 muffins

Ingredients

  • 6 thick slices deli ham
  • 6 eggs
  • 6 tablespoons chopped spinach
  • 6 tablespoons shredded cheddar cheese
  • freshly ground pepper

Instructions

  1. Preheat oven to 350 degrees F.
  2. Spray muffin pan with cooking spray. Line muffin pan with ham slices, and press gently into cup.
  3. Add cheese, spinach and top with egg.
  4. Bake for 20-25 minutes or until egg yolk is cooked to desired firmness.
